  1. Fry garlic in a wok in oil, until golden.
  2. Add in chilli and chosen meat. Stir-fry until cooked.
  3. Add rice, sugar, fish sauce and soya sauce.
  4. Cook over medium heat while stirring until well combined.
  5. Stir through chopped shallots and basil, cook for another minute.
