Steamed Pork Buns (Char Siu Bao)

Ingredients

500 g flour

1 tablespoon dried yeast

1 tablespoon sugar

1 1/2 cups (approximately) warm water

1 cup milk

250 grams barbecued pork (Char Siu)

3-4 each spring onion

2 each dried shiitake mushrooms

1 tablespoon hoisin sauce
Steps
- Sprinkle yeast into a bowl with sugar and milk. Mix and allow to ferment for 15 minutes.
- Sift flour into another bowl, then mix in yeast mixture and water to make a bread-like dough
- Allow to stand and prove.
- Kneed again and make into a long sausage roll.
- Soak and wash mushrooms, then boil for 20 minutes.
- Cut pork and mushrooms into small dice.
- Combine pork, mushrooms and hoisin sauce in a bowl and mix well.
- Separate dough into 12 pieces and roll into flat circles.
- Put filling into the centres, then close at the top, twisting to seal.
- Have small squares of baking paper ready and place the buns on top.
- Allow to stand for 10 min. Then steam for 15-20 minutes.
