Steamed Pork Buns (Char Siu Bao)

  1. Sprinkle yeast into a bowl with sugar and milk. Mix and allow to ferment for 15 minutes.
  2. Sift flour into another bowl, then mix in yeast mixture and water to make a bread-like dough
  3. Allow to stand and prove.
  4. Kneed again and make into a long sausage roll.
  5. Soak and wash mushrooms, then boil for 20 minutes.
  6. Cut pork and mushrooms into small dice.
  7. Combine pork, mushrooms and hoisin sauce in a bowl and mix well.
  8. Separate dough into 12 pieces and roll into flat circles.
  9. Put filling into the centres, then close at the top, twisting to seal.
  10. Have small squares of baking paper ready and place the buns on top.
  11. Allow to stand for 10 min. Then steam for 15-20 minutes.
