Shepherd's Pie

  1. To make the mashed potato topping: Peel and dice the potatoes into 1-inch cubes.
  2. Cook in boiling, salted water until tender.
  3. Drain off water, and mash potatoes with a fork, mixing in 2 teaspoon of butter.
  4. Add salt to taste, then quickly mix in 1 cup of milk.
  5. Beat with a fork until fluffy.
  6. To make the filling: Cook lamb and onion in a saucepan in a little oil until browned.
  7. Mix in flour, salt, vegemite and vegetables.
  8. Then add water and simmer with lid on for about 45 minutes.
  9. Stir occasionally while cooking.
  10. Fill a greased casserole dish with the mince mixture.
  11. Cover with mashed potatoes, and dot with butter.
  12. Bake in the oven at 180C till potato crust is golden
