  1. Melt butter in a large saucepan.
  2. Add potato, onions, carrots and 1/2 cup stock. Cook until soft
  3. Add milk and rest of stock. Simmer 20 minutes.
  4. Blend until smooth.
  5. Serve with chopped chives or parsley.
