Granny's Carrot Soup

- 1 tablespoon butter
- 2 ea onion, finely sliced
- 1 ea potato, peeled, sliced

700 grams carrots, peeled, sliced
about 11 carrots
- 3 cups chicken stock
- 3 cups milk
- 1 to taste salt and pepper

1 sprig chives
or- 1 sprig parsley
Steps
- Melt butter in a large saucepan.
- Add potato, onions, carrots and 1/2 cup stock. Cook until soft
- Add milk and rest of stock. Simmer 20 minutes.
- Blend until smooth.
- Serve with chopped chives or parsley.
