Broccolini & Crumbs

- 1/3 cup olive oil
- 3/4 cup panko breadcrumbs
- 1 teaspoon salt flakes
- 4 clove garlic, thinly sliced
- 1/4 cup parsley, roughly cut
- 1 teaspoon lemon rind
- 460 gram broccolini
Steps
- Heat oil in a frying pan over medium heat.
- Stir in panko and salt flakes, fry for 5 minutes or until golden.
- Add garlic, stir for 3 minutes or until cooked.
- Add chopped parsley and lemon rind.
- Boil trimmed broccolini for 3 minutes, or until tender.
- Drain, toss with breadcrumb mixture.
